Servers often share a percentage of their tips with support staff — bussers, bartenders, food runners — called the tip-out. Multiply your total tips by the tip-out percentage to find what you pass on, and subtract it to see what you keep. On $300 in tips with a 20% tip-out, you give $60 and keep $240.
