Baker’s percentage expresses every ingredient as a percentage of the flour, which is always 100%. So at 70% hydration and 2% salt, 1,000 grams of flour needs 700 grams of water and 20 grams of salt. It lets you scale a formula to any batch size just by changing the flour weight.
Because flour is the anchor, two bakers can share a recipe as percentages and each scale it to their pan or oven. Salt is typically around 2% of flour; hydration varies by bread style. Everything is by weight, not volume.
