Low-and-slow barbecue is timed by the pound. At a smoker temperature around 225°F, brisket takes roughly 60–90 minutes per pound; this calculator uses your rate and adds a rest. A 12-pound brisket at 75 minutes per pound is about 15 hours of cook time, plus an hour’s rest.
Time is only a planning guide — brisket is done by temperature and feel, usually around 200–205°F internal when it probes like butter. The “stall,” where the temperature plateaus for hours, can be pushed through by wrapping. Always start early; a brisket can rest for hours held warm.

Plan on about 60–90 minutes per pound at 225°F. A 12-pound brisket runs roughly 12–18 hours — but cook to temperature, not the clock.
Around 200–205°F internal, when a probe slides in with little resistance. That matters more than elapsed time.
Resting lets the juices redistribute and finishes the cook. An hour or more, held warm, makes a noticeably juicier brisket.
