Millilitres measure volume and grams measure weight, so converting between them needs the ingredient’s density (grams per millilitre). Water is the simple case at exactly 1 g/mL, so 100 mL of water is 100 g. Other ingredients differ: oil is about 0.92 g/mL, honey 1.42, flour around 0.53. Pick the ingredient and the calculator multiplies or divides accordingly.
For water and most thin liquids the numbers are close to equal, but for oils, syrups and dry goods the density really matters.
